Banana Bread Muffins

Ingredients
  • 5 eggs

  • 2 very ripe bananas

  • 1/4 cup coconut oil

  • 1/2 cup coconut flour

  • 1 tsp baking soda

  • 1 tsp vanilla

  • milk, if batter is too thick

  • Mix in or top with chopped nuts if desired

Recipe

Preheat oven to 400 degrees.

Mix all ingredients until smooth.  If thick, mix in a little milk.

Grease muffin pan with coconut oil. Use about 1/4 cup of batter for each muffin.

Bank for 13-18 minutes until set.  Use a butter knife or tooth pick to test center.  They are done cooking when the knife or toothpick comes out clean.

Makes 12 muffins
